Category Description: 
Morrell Meats is a very special industry to me on the Peavine Division. It represents two things. First is the role meat packing played in the Cincinnati area for much of the cities history. Porkopolis is a title earned, not given. And while meat packing has moved elsewhere over the years, it does not dimish its importance to Cincinanti's history.

Second is far more personal. I spent thriteen years working for John Morrell and Co. I was responsible for manufacturing and shipping IT applications, which meant I spent a lot of time in the plants and on the shipping docks. I became pretty familiar with the entire meat packing process. I came to really enjoy the industry and respect the people working in it.

I also became fascinated by the modeling opportunities of the meat packing industries. Years ago, Model Railroader published a book on meat packing. In addition to meat products which you'd expect from a packing house, a large plant like the one in Sioux Falls SD, where I spent much of my time, could have nearly a dozen products moving in and out. Meat items could range from sides of meat, major cuts like bellies and hams, to trimmings, to process meats like lunch meats and sausages to offal product such as organs, lard and blood. Beside the meat items, you could have other items moving in and out. Livestock delivered by stock cars. Coal for the power plant. Packaging materials and ingredient. Other meat material (the morrell plant only processed hogs, so beef and chicken were delivered). Even heavy equipment would be delivered by rail. You could easily build an entire layout centered on a meat packing plant.

I've elected to model a plant that slaughters animals and produces the major cuts of meat. Livestock is trucked in, but finished goods and trimmings are shipped by railcar. My Morrell Meats plant became part of the larger Morrell Corporation the same way so many sights did, through acquisition.
